We are so excited to welcome Matthew Capper to our team. Immensely popular in the Chester foodie scene, he's got lots of incredible ideas as to where we can see The Restaurant heading.
This is what you can expect to see:
- I’m inspired by food and pick up tips from everywhere I eat and travel to. French cuisine sparked my passion, was the basis of my training and is the starting point for a lot of my food.
- Seasonality is key. ‘Seasonality is important to me and I would like to create 12 seasonal menus at Oddfellows – so that the menu showcases the best of the season.’
- I like to start a dish with vegetables or a particular herb or spice and then go from there. I might get inspired to create a recipe with carrot and lemon thyme and then work out how to bring meat or fish into the dish. Vegetables are never the afterthought for me
